This is glitched but thankfully it is easily fixed. The thing with this trophy is Free Ride is a Single Player game mode but it also has an online component which you can access via Private Sessions and it appears that there is some kind of requirement for you to have spent at least some time playing online. Basically, you can pop the trophy doing it all in Free Ride online or a combination of some online and some single player but it will not unlock just by Free Riding in Single Player.
What I did was do it all online in small chunks, I selected a single private session 10 minutes long in Phoenix and drove in circles around the outside of the arena averaging 65mph. As you may have worked out, it took around 7 sessions of this for the trophy to unlock and you can do it any way you wish but you must play online at some point. Once you hit 100 miles, which you won't know about because there's no menu anywhere to find out what distance you've covered, then you will end the session and the trophy will unlock.
